I don’t want to be that guy, but I make the best apple crumble.

And this is it, just perfect.

Serves: 10–12
Prep time: 30 minutes
Bake time: 20 minutes

Ingredients

Crumble topping

135g unsalted butter, melted

75g oats

75g brown sugar

60g plain flour

40g long thread coconut

¼ tsp salt

2 tsp cinnamon

Apple filling

4 large apples, cut into 1cm cubes

1½ cups cold water

50g brown sugar

1 tsp vanilla

1 tsp cinnamon

1 tsp mixed spice

Pinch of salt

1 tbsp cornflour mixed with 4 tbsp cold water, to thicken

Vanilla custard

250g milk

50g caster sugar

¼ tsp salt

20g flour

2 tsp vanilla essence

1 egg yolk

—

Method

Preheat your oven to 180°C fan bake.

Crumble topping

Place all of the crumble ingredients into a medium mixing bowl and stir until combined. Set aside.

Apple filling

In a large pot, add the apples, water, brown sugar, vanilla, cinnamon, mixed spice and salt. Cook over medium heat, covered, for about 10 minutes until mostly softened (they will cook a little more in the oven). Stir occasionally.

Give the apples a taste, and if they are still quite sharp, add another tablespoon of brown sugar to your liking. Stir the cornflour slurry into the apples to thicken. Cook for a further minute.

Remove from the heat and pour into an oven dish.

Sprinkle the crumble topping over the fruit and bake for about 20 minutes until golden and crunchy.

Vanilla custard

Add all of the ingredients to a saucepan and heat over medium heat, stirring continuously.

After 5–10 minutes, the custard will thicken. Pass it through a sieve into a bowl to remove any lumps. Cover the surface with cling film so it doesn’t form a skin. Rewarm the custard when you are ready to serve.

Serve the crumble straight from the oven with a big dollop of custard.
